Licensee of the Ship and Crown and the Crow's Nest

When first leaving school Mark went to Merchant Navy Catering college in Graves End. On completion of his training he then went for the next two years and joined the QE2 as a waiter and travelled extensively around the world. After that, he did a 6 year stint in the Royal Navy before returning to work in Guernsey and take up his ambition of running the Ship and Crown which has been in his family for thirty years and was once run by his father Baron Pontin.

The Ship and Crown is one of the busiest pubs in Guernsey and Mark has run it for 17 years now. The newest addition to the building, the Crow's Nest, has always been a dream of Mark's as he has always wanted to have a restaurant above the Ship and Crown with views of the Channel Islands and a relaxed eating experience.

Shannon, 23, first discovered Guernsey when travelling Europe in 2007 after leaving college in 2006. She has worked at the Ship and Crown on and off between her travels ever since.

Originally from Montreal, Canada, Shannon is fluent in French and has worked in popular bars and clubs as well as busy restaurants and gastro pubs in Saint Sauveur, Montreal, London and Guernsey.

Upon completion of catering college in Gdansk, Poland, Pawel went on to work in different restaurants all over Europe including London, Sweden and Denmark.

His experience is vast; including working in fine-dining restaurants as well as Swedish cruise ships. Pawel was first head hunted from Poland by the Chalet Hotel five years ago. Three years ago he moved to the Ship and Crown where when he heard from Mark that they would eventually be opening a two floor restaurant upstairs.

Since beginning at the Ship and Crown, Pawel introduced all day bar meals. He now runs the kitchens on both floors.
